I made this recipe for Mike and I last night, and we both absolutely loved it! It is very easy and it really doesn't take much time. Served with green beans, garlic mashed potatoes, and dinner croissants. Yes, I had two!! :)

Ingredients:

Chicken Breasts (pound down till they are pretty thin, you'll be rolling them)
Salt and Pepper
Swiss cheese (1 1/2 slices per chicken breast)
Ham (I used 2 deli thin slices of brown sugar ham for each chicken breast.)
1 Egg (just mixed up in a bowl)
Bread crumbs ( I just poured some in a bowl. Probably only need a 1/2 cup to a cup)
Paprika (Put a few shakes in with the bread crumbs)
Butter (optional)

Preheat oven to 400. Spray a baking pan with non-stick cooking spray. (I used foil for easy clean up.)

Salt and Pepper both sided of the flattened chicken breasts. Place one piece of swiss cheese in the center of the chicken. Top it with 1 or 2 slices of the ham. (I used two because my ham was very thin.) Roll the chicken breasts and secure with toothpicks.

Dip the rolled up chicken into the egg and roll or sprinkle it in the bread crumbs. Place chicken on the baking pan seam side down. Top with a small dab of butter.

Bake for 30-35 minutes. Top with half a slice of cheese and put back in oven just until cheese is melted. Take out or remind your eaters of the toothpicks. I also served it with a mushroom sauce.

Mushroom Sauce

1 can Cream of Mushroom Soup (could substitute Cream of Chicken)
1/2 cup of Sour Cream (I don't think I used that much)
1 tablespoon of Lemon Juice

Mix together and heat.
